Vegan cheesecake
Ingredients for a small springform pan (diameter 15cm)
- 125g flour
- 1 teaspoon Baking powder
- 100g Stevia sprinkle sweetener
- 1 pinch of salt
- 125g margarine
- 2 tbsp water
- 500g soy yogurt
- Grated lemon peel
- 1 bag of vanilla pudding powder
Preparation of dough:
Knead the flour, baking powder, salt, half of the margarine (62.5g), 40g Stevia sweetener and 1.5 tablespoons of water into a dough and store in the refrigerator for about 30 minutes.
Preparation of filling:
Mix the soy yoghurt with a little lemon peel, the pudding powder, the remaining sugar and the margarine.
Optional: Add some extra flavor and sweetness to the cheesecake filling with our Stevia Fluid.
Preparation:
Spread the dough evenly (including the edge) in a greased springform pan. Distribute the filling evenly over the dough and bake the cake at 180 degrees top/bottom heat for about 60 minutes.
Tip: decorate with berries.
